This is an interesting question. There are optical probe cables that you can use, but I believe that you want to use LEDs. Is this correct?
This is something that I have thought sometimes, but I don't have anything ready. Maybe we'll check this in autumn. At the moment, I can't help you. The easiest way is you buy the cable and connect that to Arduino.
